Pour simmering, but not boiling, water on the tea bag, then cover and let it brew for 2-4 minutes.

Clever tip: Try to use fine lavender in your dairy desserts (crème brûlée, custard tart, or ice cream for example), this is done by flavouring hot milk with the infusion (1 infusion bag per 1/4 litre milk). A very subtle and nice taste that brings an element of surprise to your desserts.
