Fine lavender hydrosol

According to the French Pharmacopea "floral and plant based water hydrolates are obtained by water steam process on various aromatic and non aromatic plant part. They are composed of the cooled steam water and separated from the essential oil by density". When steam distilling Fine Lavender we obtain lavender floral water and lavender essential oil. The essential oil is floating above the floral water since its density is lightler. The bottom part correponds to the floral water also called hydrolate. It contains less concentrate active principles, generally more hydrophils, which means have an affiliation to water. When leaving the still, the floral water often has a milk-like composition which gave its name to it - hydro (water) and lat (lait in French). The dissolution happens when the micro-drops of the essential oil exceed 1 micron. Floral water are by far less powerful than the pure essential oil, because their active molecules are very diluted. They are sometimes considered as a under product for essential oil, but they in fact present many properties. They represent the soft version of aromatherapy. "Hydrolats" are also called "floral waters" when the distilled plant is a flower, like it is the case for fine lavender.
